Paris-Brest was created in honor of a bicycle race that went from Paris to Brest and then back to Paris. A pastry chef who owned a pâtisserie that was on the route of the race created this pâte à choux dessert in honor of the race. It is filled with diplomat cream and finished with strawberries.
